Freeze-dried candy (puffed, crunchy versions of gummies, taffy and marshmallows) is a common reason people look at home freeze dryers. It works differently from preserving food: instead of a long freeze and a slow, cold dry, candy uses warm shelves under vacuum so the candy expands and turns crisp quickly.

How it works

When candy is warmed in a vacuum, trapped air and moisture expand and escape, and the candy puffs. Harvest Right’s support guidance says candy runs with a shelf temperature of about 150°F, and its FAQ says candy typically takes about 2 hours, versus 13–35 hours for most foods.

Which machines have a candy setting?

Brand What the manufacturer says (Oct 11, 2026)
Harvest Right Candy Mode on its PRO models; its app also includes candy recipes. Candy Mode lets you run consecutive candy batches without defrosting between them.
Stay Fresh Its collection page says every machine shares the same controls, including candy mode.
Blue Alpine We found no candy-mode details on its website as of October 11, 2026. Check with Blue Alpine directly.

Harvest Right Candy Mode: the basic steps

From Harvest Right’s support article on starting a Candy Mode batch: 1. Start a new batch and choose Candy Mode. 2. Set the dry temperature above 135°F. Harvest Right says 150°F is common. 3. The machine runs a short pre-cool of about 15 minutes. 4. Load candy in a single layer with room to expand, since candy puffs. 5. The vacuum and warm-shelf phase runs for roughly two hours (Harvest Right lists about 1 hr 59 min of pump time). 6. Harvest Right says you can run up to five candy batches before a defrost is needed.

Stay Fresh owners should follow Stay Fresh’s manual and candy-mode instructions for their model.

Candies that work well

Harvest Right’s “foods you can freeze dry” page lists these candies and treats: – Skittles (and similar chewy, fruit-flavored candies) – Gummy bears and other gummies – Saltwater taffy – Marshmallows – Jell-O

Harvest Right’s support guidance also notes that some candies may not dry or puff, and encourages owners to experiment.

Candies that usually don’t

  • Chocolate and other high-fat candy. Fat doesn’t freeze-dry well (UMN Extension; USU Extension), so plain chocolate won’t puff like gummies. LSU AgCenter’s FAQ also lists high-fat and high-sugar foods among those that don’t freeze-dry well for preservation.
  • Hard candy (such as lollipops or jawbreakers) is unpredictable. Harvest Right says some candies may not dry or puff, so try a small amount first.
  • Anything with a liquid center or heavy coating. Results are unpredictable.

Selling freeze-dried candy: check your state’s rules first

Many buyers are thinking about a side business. Rules are set state by state, and sometimes locally, so check with your state’s department of agriculture (or health department) and your local extension office before you sell anything.

As one example, Michigan’s cottage food guidance (MDARD) allows only non-potentially hazardous foods, made in a home kitchen and sold directly to consumers within the state. An Ask Extension answer on Michigan rules says foods that qualify as cottage foods under Michigan’s law can also be sold freeze-dried. A later Ask Extension answer citing MDARD said freeze-drying non-potentially hazardous foods like candy is allowable when “conducted in a commercial freeze dryer to completion.” If you’re in Michigan, confirm with MDARD whether your specific freeze dryer meets that “commercial” requirement. Your state’s rules may differ, and labeling, sales caps and registration requirements vary.

FAQ

How long does it take to freeze dry candy?

About 2 hours per batch on Harvest Right’s Candy Mode, according to Harvest Right. Times vary with candy type and load.

Can you freeze dry candy without Candy Mode?

Harvest Right’s Candy Mode setting exists because candy needs warm shelves, not a standard cycle. Follow your manufacturer’s instructions for your model.

Can you freeze dry chocolate?

High-fat foods don’t freeze-dry well according to UMN and USU Extension, so chocolate generally won’t puff like gummies.

How long does freeze-dried candy last?

Keep it airtight and dry. Once it absorbs moisture it softens. General freeze-dried storage guidance (cool, dark, dry, moisture-proof packaging) applies; see our How to Freeze Dry Common Foods: Prep, Tray Loading, Foods to Avoid & Storage (2026).

It depends on your state’s cottage food rules. Check with your state agency and local extension office.
