Harvest Right Candy Mode: the basic steps
From Harvest Right’s support article on starting a Candy Mode batch: 1. Start a new batch and choose Candy Mode. 2. Set the dry temperature above 135°F. Harvest Right says 150°F is common. 3. The machine runs a short pre-cool of about 15 minutes. 4. Load candy in a single layer with room to expand, since candy puffs. 5. The vacuum and warm-shelf phase runs for roughly two hours (Harvest Right lists about 1 hr 59 min of pump time). 6. Harvest Right says you can run up to five candy batches before a defrost is needed.

Candies that work well
Harvest Right’s “foods you can freeze dry” page lists these candies and treats: – Skittles (and similar chewy, fruit-flavored candies) – Gummy bears and other gummies – Saltwater taffy – Marshmallows – Jell-O
Harvest Right’s support guidance also notes that some candies may not dry or puff, and encourages owners to experiment.
Candies that usually don’t
- Chocolate and other high-fat candy. Fat doesn’t freeze-dry well (UMN Extension; USU Extension), so plain chocolate won’t puff like gummies. LSU AgCenter’s FAQ also lists high-fat and high-sugar foods among those that don’t freeze-dry well for preservation.
- Hard candy (such as lollipops or jawbreakers) is unpredictable. Harvest Right says some candies may not dry or puff, so try a small amount first.
- Anything with a liquid center or heavy coating. Results are unpredictable.
Tray prep and supplies

Selling freeze-dried candy: check your state’s rules first
Many buyers are thinking about a side business. Rules are set state by state, and sometimes locally, so check with your state’s department of agriculture (or health department) and your local extension office before you sell anything.
As one example, Michigan’s cottage food guidance (MDARD) allows only non-potentially hazardous foods, made in a home kitchen and sold directly to consumers within the state. An Ask Extension answer on Michigan rules says foods that qualify as cottage foods under Michigan’s law can also be sold freeze-dried. A later Ask Extension answer citing MDARD said freeze-drying non-potentially hazardous foods like candy is allowable when “conducted in a commercial freeze dryer to completion.” If you’re in Michigan, confirm with MDARD whether your specific freeze dryer meets that “commercial” requirement. Your state’s rules may differ, and labeling, sales caps and registration requirements vary.
